Cranberry Orange Sauce
4 cups cranberries
2 cups sugar
1/2 cup orange juice
Combine all ingredients.  Bring to a boil.  Turn down to a simmer and cook until berries pop.

Cranberry Sauce
4 cups cranberries
2 cups sugar
1/2 cup water
Combine all ingredients and bring to boil.  Turn down to a slow simmer.  Cook until berries pop.

Baked Cranberry-Walnut Relish
1 pound cranberries
2 1/2 cups sugar
1 cup walnuts, broken
1 cup orange marmalade
Juice of 1 lemon or lime
Wash and drain berries.  Stir in sugar, put in shallow pan and bake.  Cover tightly, set oven at 350⁰ for about one hour.  Toast walnuts for last 10 minutes of baking.  Add nuts and remaining ingredients to cranberries.  Mix well and chill.  Makes about 4 cups.

Cranberry Banana Muffins
1 1/4 cups flour
1 1/4 cups rolled oats
1/2 cup sugar
1 1/2 tsp. baking powder
1 tsp. baking soda
1/2 tsp salt
2 eggs
2 cups mashed bananas
1/3 cup vegetable oil
1 cup cranberries
Combine dry ingredients in a mixing bowl.  Beat egg, banana and oil together until smooth.  Add to dry ingredients.  Stir to blend.  Stir in cranberries, until just mixed.  Fill muffin cups almost full.  Bake at 375⁰ for 20 to 25 minutes or until set and golden brown.

Cranberry Orange Loaf
2 cups flour
1 cup sugar
1/2 tsp. salt
1 1/2 tsp. baking powder
1/2 tsp. baking soda
1 whole orange cut into 1/4” pieces, about 1 cup
1 cup cranberries, fresh or frozen
1 egg, beaten
1/4 cup melted butter
3/4 cup orange juice
Orange glaze: (optional)
1/3 cup orange juice
1/4 cup sugar
In a large mixing bowl, combine flour, sugar, salt, baking powder and baking soda.  Wash orange, cut into small cubes, leaving skin on.  Remove the seeds.  Add orange to flour mixture, along with cranberries.  Combine the egg, melted butter and orange juice.  Add to dry ingredients and mix until moist.  Place batter in a greased 4 1/2”x8 1/2” loaf pan.  Bake at 350⁰ for 1 hour or until a toothpick inserted into the centre comes out clean.  Let sit for 10 minutes, then turn out on a rack to cool.  If glazing, combine orange juice with sugar.  Pour over loaf as soon as it is removed from the oven. Let loaf cool in pan.

Cranberry Waldorf Salad
2 cups fresh cranberries
3 cups miniature marshmallows
3/4 cup sugar
1 cup whipping cream
1 cup diced, unpared apples
1 cup seedless grapes
1/2 cup broken walnuts
1/4 tsp. salt
Grind cranberries in a chopper or blender.  Combine with marshmallows and sugar.  Cover and chill overnight.  Whip cream.  Fold cranberry mixture and all remaining ingredients into whipped cream.  Refrigerate until serving time.
